Baked Vacherin
/How can anyone not love cheese! Baked Vacherin Mont d'or cheese, with a tosted almond topping served with charcuterie and pickled vegetables.
Vacherin is ridiculously rich and creamy, slightly nutty and has a hint of sweetness. It's made from pasteurised cows milk on the Swiss side of the Jura mountains.
Probably not the healthiest starter in the world, at 45 to 50% fat, but one of the best to share with a friend...an absolute must for any cheese aficionado.
