Super healthy lunchtime rocket salad

Super healthy, super tasty, super Philadelphia garlic & herb...mmmm

I've based my lunch on one of my favourite salad ingredients; Rocket Lettuce. It's firery peppery taste is the making of any salad, so today I've mixed it with freshly picked homegrown tomatoes and dressed in homemade olive oil.  This is a great combination as the sweetness of tomatoes compliment the intensity of the rocket.

Then to add texture I've added raw celery, carrot and cauliflower, although i'm very much aware that raw cauliflower isn't everyone's cup of tea but I love it! On the side I've spread garlic and herb Philadelphia light on no-salt rice cakes and topped with chopped raw red onion.

So i'm aware there are a lot of very strong flavours going on here but that's how I like it. Besides as an entire meal goes it doesn't have any simple carbs or bloating breads.  In fact it's extremely nutritious, massively filling, packed full of energy and extremely low in calories...so i'm happy :)
