Ayala Vintage 2002 Champagne
/Ayala is effectively the second label of Bollinger but that by no means decries the high quality of their wines.
As a house champagne at many restaurants it's always been a go to bubbly for me.
The Ayala 2002 vintage champagne was a great year for Ayala and is drinking perfectly today.
It has the complexity and richness you'd come to expect from a premium vintage champagne but retains an elegant freshness. A liveliness which makes it a joy to drink and is indication that it will get even better.
So my advice is to buy it & tuck it away for another decade! Gorgeous champagne that went really well with our garlic escargot starter.
